baby update!

We went to the doctor this morning and the baby finally turned, yay!!! That was such a huge relief to me, even though I know they do C-sections all the time, I was scared for the unknown/unfamiliar. But what an answer to prayer...let's just keep praying he stays in this position!! I had an ultrasound and they are estimating that he weighs about 6 lbs 12 oz and we got to see his face for the first time! It was pretty amazing to see cute little cheeks, nose, and eyes that we'll get to meet very soon. Things are progressing and now we are just waiting....he could join us any day now :)

what we're eating this week...

Nothing too exciting on the menu this week as I am getting pretty uncomfortable and worn out. We go to the doctor on Thursday to find out if the baby is still breech and if he is then we'll proceed with making a C-section plan. I'm ready to find out what's happening next and so ready to meet this little guy!!

Monday: Italian Meatball subs
Tuesday: Hot Dogs and Sweet Potato Fries
Wednesday: Creamy Ravioli (from this Tortellini recipe)
Thursday: Make your own Wraps (no recipe, just a bunch of ingredients to pick from :)
Friday: Easy Crock Pot Potato Soup  *I did this with regular potatoes last time and it turned out great. I'm going to try the hash browns this time around to save myself from standing and peeling/chopping potatoes...we'll see!

preggo update

Well, I am starting to feel incredibly pregnant (i.e. LARGE!) :) I'll be 36 weeks on Saturday and our little guy will be here in just a few short weeks!! Last week when I went to the doctor he was still in breech position, which at this point it's getting less and less likely that he'll turn :( We're looking at a possible C-section at around 39 weeks, which I'm not thrilled about but I know that God is in control. So, please pray with us that he'll turn!! I can't believe the time is almost here, we are so excited to meet him!!

what we're eating this week....

Well, the weekly menu isn't off to a great start on my part because I just ruined my roast for french dip sandwiches....oh pregnancy brain. One day, I will have a full working brain again. Until then, we'll enjoy some unplanned Chinese take out tonight :) Here's the rest of the weeks plan.......

Tuesday: Greek Chicken Pockets  (can't wait to try this!)
Wednesday: Mini Meatloaf and Sweet Potato Fries (recipes below)
Thursday: Spaghetti and Salad
Friday: Ritzy Chicken Casserole (didn't get to that last week)
Saturday/Sunday: Leftovers and Breakfast for dinner (maybe french toast? )


Sweet Potato Fries
-One medium sweet potato per person
-Non stick cooking spray
-optional spices: garlic, canjun season, salt, pepper, cinnamon
Preheat oven to 450 degrees and spray baking sheet with non-stick spray. Wash potatoes and dry (so they aren't soggy). Peel potato (or don't because the skin is very good for you!!) Cut each potato in thin strips (about 3/4 inch thick) and place on baking sheet. Spray the potatoes lightly with the spray (I like to use olive oil based sprays to do this) and add any of the spices you chose. Toss together and coat potatoes evenly and spread them out evenly over the baking sheet. Bake for 15 minutes, flip them over and bake for another 10-20 minutes until they are done!

Mini Meatloaf
-1 lb ground beef
- 1 package cornbread stuffing (I only use about 3/4 of the package)
- 1 egg
- 1/2 medium onion chopped fine
- 2-4 garlic cloves, minced
- 1 tsp dijon mustard
-1 tbsp Worcestershire sauce

Topping:
1 cup ketchup
1/4 cup packed brown sugar
2 1/2 tablespoons apple cider vinegar

Preheat oven to 350 degrees. Spray a muffin tin with non-stick cooking spray. Mix all meatloaf ingredients together in a bowl (I sautee the onions and garlic beforehand just to soften them up). Separate mixture into muffin tin. Combine topping ingredients and spoon over each mini meatloaf (if you have extra you can add more toward the end of the cook time). Bake at 350 for 30 minutes! Easy and delicious!!
